4th of July

Happy 4th of July!  After church tomorrow, my daughter and family are coming to our house and my son is already here.  We're looking forward to our whole family being together again. 

I bought a few sparklers and a couple of parachutes for my granddaughter.  It will be fun to see how she enjoys the fireworks in our backyard as well as the big fireworks downtown.

Our menu for the afternoon meal is:  Brisket, slaw, corn on the cob, black bean casserole, deviled eggs, veggie tray, fruit, tea and lemonade. 

Recipes:
Black Bean Casserole
2 cans black beans, rinsed and drained
1/2 red bell pepper, chopped
1/2 onion, chopped
1/2 stick, butter
1/3 c white syrup
1/3 c brown sugar
Grease 9x13 pan or casserole dish.  Saute onion and pepper in butter.  Combine beans, syrup and brown sugar.  Bake at 350 for 30 minutes or until bubbly.

Cole Slaw
Dressing:  1/2 cup sugar, 1 cup oil, 1/3 cup vinegar (white), 2 packages Ramen Noodle Seasoning.  Put in fridge for one hour or overnight.
Slaw:  Package of slaw (including carrots, purple cabbage and green cabbage), Ramen Noodles (crumbled), Glazed almonds (about a handful)

Deviled Eggs
6-8 hard boiled eggs
1 t vinegar
2 T salad dressing
Salt
Pepper
Paprika

Cut eggs in halves.  Take out the yolks and mash with fork until fine.  Add above ingredients, except paprika, and make a smooth mixture.  The yolks may need a little more moisture and you can add a little more salad dressing.  Place the mixture back in egg whites and sprinkle with paprika.

Oh the black beans sound wonderful!!! All of your recipes do, but we love, love, love black beans! Hope your day was great!!!
